• 6 whole strawberries
• 4 tbsp homemade sugar-free strawberry jam
• ⅓ cup cottage cheese
• 1 cup unsweetened almond milk
• 4 tbsp chia seeds
• 2 tbsp stevia
• 2 tbsp chopped pistachios, or almonds
• 2 tsp monk fruit honey (optional)
Step-by-Step Instructions
1. Add 6 whole strawberries, cottage cheese, almond milk, and stevia to a blender. Blend until completely smooth.
2. Whisk chia seeds into the blended mixture until fully combined. If you do not like the chia texture you can also blend them in the mixture, but honestly, the chia texture is my favorite part.
3. Grab two jars or containers with lids, I used glass mason like jars. In each one, add 2 tbsp of sugar-free strawberry jam at the bottom. I made my own by cooking strawberries with sweetener and then pure it. I will make a video of it soon, promise!

4. Add 2 tbsp of chopped strawberries on top of the jam layer in each container.

5. Pour the chia mixture evenly over both containers, make sure to leave some space for the strawberries and nuts on top.

Seal and refrigerate for at least 30 minutes, or overnight for best results.

6. Before serving, top with remaining chopped strawberries, chopped pistachios or your choice of nuts, and a drizzle of monk fruit honey.

Directions

- Grab two containers, in each add strawberry jam at the bottom, add 2 tbsp of chopped strawberries. Then add chia mixture, close and refrigerate at least 30 min. For best consistency refrigerate overnight.
- Before serving add 1 or 2 tbsp chopped strawberries, add chopped pistachios, and a drizzle of monk fruit honey. Enjoy!
