Tomato & Cucumber Greek Salad

- Salad Bowl

Ingredients
- 6 mini cucumbers
- 14 cherry tomatoes
- 1 medium red onion
- ¼ cup fresh parsley, chopped
- ½ cup feta cheese crumbled
Dressing
- ¼ cup olive oil
- 2 lemons, juiced
- 1 tbsp dijon mustard
- ½ tsp dried oregano
- ½ tsp pink Himalayan salt
- ½ tsp black pepper
Directions
- Slice cucumbers into halved rounds. Halve the cherry tomatoes. Cut the red onion in half, then into quarters, the into thin slices.
- In a small bowl, whisk together all dressing ingredients until combined.
- Add the veggies to a large bowl and pour dressing over top.
- Add parsley and feta cheese, then toss everything together until well coated.
