Ingredients

  • 1 lb boneless skinless chicken
  • ¼ cup fresh parsley, chopped
  • 5 garlic cloves, minced
  • 1 tsp dried oregano
  • ¼ tsp black pepper
  • 1 tsp salt
  • ¼ red onion
  • 1 large egg
  • ½ cup almond flour
  • ¼ cup feta cheese, crumbled
  • olive oil for pan frying

Directions

  • Add all ingredients to a food processor and pulse until combined. 
  • Using a ¼ cup scoop, portion into 20 meatballs and roll to shape. 
  • Heat olive oil in a skillet over medium-high heat and cook meatballs, turning on each side, for approximately 10–12 minutes until cooked through.
